Three Ingredient Vegan Scones

One of my friends is an amazing baker and knows how much help I need in the kitchen so she always sends me her simplest recipes! Here is a super quick and simple recipe for absolutely delicious vegan scones. It’s also a great one to make with the kids.

Makes 8-12 depending on cutter.

Preheat oven to 200°c.

Combine all ingredients in a mixing bowl. Fold together until just combined. Don’t overmix. It will be a wetish mixture. Add 1 tbsp flour if it’s too wet. Gently bring mix together and tip onto floured work bench. Pat the dough softly with your hands until it’s about 3-4cm thick. Cut out to desired size with a round cutter. Place on lined baking tray 1cm apart. Brush with plant milk and bake until golden, roughly 10-15 mins depending on oven.
Allow to cool slightly then smother in jam and coconut cream ?

We used Nakula thickened cream from the supermarket, but you can easily make your own with just a can of coconut cream – click here for the full vegan whipped cream recipe.

  • Great recipe! I’ll recommend it to our cafe clients as a plant-based menu option, if you don’t mind. I haven’t seen the use of lemonade in scones like this before. This recipe would make a good little takeaway menu item option for people to eat in the park under a shady tree nearby. Thanks Bryony!
