Three Ingredient Vegan Scones

One of my friends is an amazing baker and knows how much help I need in the kitchen so she always sends me her simplest recipes! Here is a super quick and simple recipe for absolutely delicious vegan scones. It’s also a great one to make with the kids.

Ingredients

3 cups Self raising flour
1 cup coconut cream (firm part without excess liquid)
1 cup lemonade

Makes 8-12 depending on cutter.

Method

Preheat oven to 200°c.

Combine all ingredients in a mixing bowl. Fold together until just combined. Don’t overmix. It will be a wetish mixture. Add 1 tbsp flour if it’s too wet. Gently bring mix together and tip onto floured work bench. Pat the dough softly with your hands until it’s about 3-4cm thick. Cut out to desired size with a round cutter. Place on lined baking tray 1cm apart. Brush with plant milk and bake until golden, roughly 10-15 mins depending on oven.
Allow to cool slightly then smother in jam and coconut cream ?
